With the rapid increase in food prices and shortage of food supplies experienced worldwide, it has become imperative to build even more resilient local systems. As a versatile cash crop, cassava processing is taken seriously here at Durian, and in August, we purchased our much-needed automatic fryer! Inadvertently, this has enhanced the rate at which our cassava flakes (garri) are now being produced and has increased the overall output of these quality cassava flakes while simultaneously making the work a little easier for the women (who had to fry the garri themselves manually) to do. We consider this purchase a step in the right direction and a long-term investment in our cause and the people we serve.
As a result of this addition to our production process, we will be processing 2 tons of cassava flakes monthly which will serve 100 households monthly.
